change FOV

Some options:
you can bind fov +/_ to a key in controller options and then increase or decrease fov on-track with those keys.

If you want to get a similar point of view as in your pic, go on-track and press insert/home/pageup keys multiple times for different camera's. (I think home will give the most different options)
 
Go to vehicles file look for cam file. Look at cockpit view and change the values to say 27.0000 25.0000. Than in game set for to default. If you want to change after that just keep tweaking the number till your happy.
