Is there some way to edit the actual driver? Give me some shades, long hair, scars, change eye,hair or skin color. Stuff like that.

I only know of the usual path, get ready to be disappoint 
There are files to edit driver and helmet, just like you would paint a skin for a car. they can be found within a mod/vehicles/vehicle folder/misc folder.
for example in the GP79 mod we have BrabhamBT4905driver.dds and BrabhamBT4905helmet.dds
They can be repainted to match a skin scheme for a car.
Its not very advanced though, basically its just a body (race suit) and helmet. The Helmet is actually what will stand out the most.
